Apple Walnut And Cranberry Loaf - cooking recipe

Ingredients
    1 cup toasted walnuts, coarsely chopped
    1 cup dried cranberries
    1 lb apples, peeled, cored, diced
    1-2 None lemons, juiced
    3/4 cup butter or margarine
    1/2 cup granulated sugar
    1 cup brown sugar, plus 2 tbsp
    3 None eggs, beaten
    2 cups spelt flour, sifted
    2 tsp baking powder
    1 cup powdered sugar
Preparation
    Preheat oven to 350\u00b0F. Grease and flour an 11 inch loaf pan. Combine toasted walnuts and cranberries. Set aside. Sprinkle diced apples with 2 tbsp lemon juice.
    Cream butter and sugar. Add beaten eggs then flour and baking powder. Fold in walnut cranberry mixture, reserving 1 tbsp for garnish, and diced apples. Transfer to prepared pan and bake for 1 hour, or until a skewer inserted in the center comes out clean. Let cool in pan for 20 mins then turn out onto a wire rack to cool completely.
    Mix powdered sugar with 2-3 tbsp lemon juice and stir until smooth. Drizzle over cake and sprinkle with remaining 1 tbsp walnut-cranberry mixture. Set aside for 30 mins, until icing is set.
