Warm Potato Salad - cooking recipe

Ingredients
    8 None medium red potatoes, peeled
    1 cup (8 oz) 2% cottage cheese
    1/4 cup light mayonnaise
    1 tsp lemon-pepper seasoning
    1/2 tsp seasoning salt
    1/2 tbsp Dijon mustard
    1/4 cup chopped fresh parsley leaves
    1/4 cup chopped green onion tops
    1 cup chopped celery
    2 None hard boiled eggs, chopped
    1/4 cup chopped bell pepper
    1/4 cup diced pimento
Preparation
    In a pot over high heat, bring salted water with potatoes to boil in enough water to cover. Cook for 10-15 mins. Let potatoes cool for 15 mins. Cut into cubes.
    In a food processor, puree cottage cheese for 3 mins or until smooth. Transfer to a large bowl. Whisk in mayonnaise, lemon-pepper, seasoning salt and mustard. Combine remaining ingredients to coat. Gently add in potatoes. Serve at room temperature.
