Slow Cooker Italian Pork And Pepper Ragu - cooking recipe
Ingredients

2 tbsp olive oil
3 1/2 lbs rindless boneless pork belly, coarsely chopped
4 None Italian sausages
3 None red peppers, thickly sliced
2 medium onions, thinly sliced
3 cans (15 oz each) cannellini beans, drained and rinsed
6 cloves garlic, crushed
1 can (15 oz) diced tomatoes
1 1/3 cups reduced sodium chicken stock
1 tbsp tomato paste
1 tsp dried oregano
1/2 tsp red pepper flakes
2 tbsp fresh oregano leaves
Preparation

Heat oil in large skillet on high heat. Cook pork, in batches, until browned. Transfer to a 4.5-quart slow cooker.
Cook sausages in same pan until browned. Transfer to slow cooker with peppers, onions, beans, garlic, tomatoes, stock, tomato paste, dried oregano and red pepper flakes. Cook, covered, on low, for 8 hours.
Skim fat from surface. Season to taste. Serve sprinkled with fresh oregano.
