Eggs En Cocotte With Smoked Cod - cooking recipe
Ingredients

1 lb smoked cod
2 None scallions, sliced
1 2/3 cups baby spinach
1 cup heavy cream
4 None large eggs
1.5 oz cheddar cheese, grated
None None Crusty bread or toast and salad leaves, to serve
Preparation

Preheat oven to 350\u00b0F. Lightly grease four 1 1/2 cup ramekins.
Place cod in a frying pan. Cover with water and bring to a simmer on medium heat. Remove fish from pan and discard skin. Flake flesh with a fork.
Divide fish evenly between ramekins. Sprinkle each with scallions and top with an even amount of spinach.
Pour 1/4 cup cream into each ramekin and season to taste. Break an egg into each dish and sprinkle with cheese.
Bake for 10-15 minutes until golden and cooked through. Serve with crusty bread or toast and salad leaves.
