Vienna Almonds - cooking recipe

9 oz whole blanched almonds
1/2 cup + 1 tbsp sugar
1 None vanilla bean, split
2 tsp butter

Preheat oven to 350\u00b0F. Line a baking sheet with parchment paper. Arrange blanched almonds on baking sheet in a single layer and bake for 10-15 minutes, until light golden.
In a medium, heavy-based saucepan, combine sugar, 1/4 cup water and vanilla. Stir over medium heat until sugar dissolves. Bring to a boil and cook, without stirring, 8-12 minutes, until just golden around the edges. Discard vanilla bean.
Add almonds to mixture along with the butter, gently stirring to coat. Pour onto lined baking sheet and use a wooden spoon to spread into a single layer. Set aside for at least 30 minutes. Break into pieces and store in an airtight container.
