Ingredients

2 cups vanilla ice cream
2 None large eggs
1/2 cup all-purpose flour, sifted
1/3 cup milk
1 tbsp sugar
1 cup digestive biscuits, finely crushed
1/2 cup breadcrumbs
1/2 cup desiccated coconut
None None vegetable oil, for deep-frying
None None sliced fruit, to serve
Preparation

Line a tray with parchment paper and place in freezer until cold. Using a large ice cream scoop, form 6 large, round balls from vanilla ice cream and place on tray in freezer. Freeze for at least 30 mins, until very firm.
In a medium bowl, whisk together eggs, flour, milk and sugar until smooth. In a large bowl, combine cookie crumbs, breadcrumbs and coconut. Working quickly, coat ice cream balls in batter then roll in crumbs. Return to freezer for 30 mins, until firm. Repeat process, ensuring balls are completely coated in crumbs. Return to freezer for 1 hour or overnight, until very firm.
When ready to cook, heat oil in a wok or large saucepan to 325\u00b0F. Working in batches, fry ice cream balls for 2-3 mins, until golden brown and crisp. Serve immediately with sliced fruit.
