Garlic Chicken - cooking recipe

Ingredients
    6 tbsp olive oil
    2-3 bulbs garlic (about 40 cloves), broken into unpeeled cloves
    2/3 lb celery, diced
    4 sprigs fresh rosemary
    6 sprigs fresh thyme, leaves stripped from stems
    1 None oven-ready chicken (about 3lbs)
    None None bread, to serve
Preparation
    Preheat the oven to 400\u00b0F. Heat the oil in a Dutch oven and fry the garlic, celery, rosemary and thyme for 2 minutes. Place the chicken in the Dutch oven, cover and roast for 2 hours. Uncover and cook for a further 15 minutes. Serve with bread.
