Sautéed Turkey Breasts With Citrus Stuffing - cooking recipe

Ingredients
    4 tbsp olive oil
    1 None onion, sliced
    1 1/2 cups fresh breadcrumbs
    2 tbsp fresh flat-leaf parsley leaves, chopped
    1/2 None lemon, zest cut into fine strips
    1/2 None orange, zest cut into fine strips, plus 2 tbsp juice
    1 None lime, zest cut into fine strips, plus 1 tbsp juice
    1 None egg yolk, beaten
    4 (5 oz) turkey breast fillets, a pocket cut along the side of each
    None None SAUCE
    1/2 None orange, juiced
    4 tbsp honey
Preparation
    Heat 2 tbsp olive oil in a saucepan. Sweat onion for 6-7 mins, until soft. Transfer to a bowl and mix with breadcrumbs, parsley and citrus zest. Add citrus juice and egg yolk. Season. Stuff turkey breasts with mixture then tie each breast with butcher's twine to hold stuffing in place. Season.
    Heat remaining oil in a large frying pan. Sear turkey over high heat for 2-3 mins per side, until golden brown. Reduce heat and cook for 8 mins.
    Add orange juice and honey. Cook, stirring, until bubbling. Cook for 3-4 min, turning to coat turkey in sauce, until meat is cooked through.
