Tamarind Glazed Pork Roast - cooking recipe

Ingredients
    1 tbsp oil
    4 lbs pork loin, trimmed and tied at 1 inch intervals with kitchen string
    None None Tamarind Glaze
    1/2 cup orange juice
    1/2 cup tamarind paste
    1/2 cup brown sugar
    2 tbsp fish sauce
    1 tsp grated ginger
    3 cloves garlic, peeled and crushed
    None None Gravy
    2 cups chicken stock
    1/3 cup tamarind glaze
    3 tsp sugar
    1 tbsp cornstarch
Preparation
    Preheat oven to 350\u00b0F. For the glaze, combine all ingredients in a saucepan, bring to a boil then reduce heat and simmer 3-5 mins. Set aside 1/3 cup of the glaze for the gravy.
    Place a roasting pan on the stove, add the oil and heat. Quickly brown the meat on all sides until just golden, then brush liberally with the glaze. Roast about 2 hours, or 40 mins per 1 lb of meat. A meat thermometer should read 160\u00b0F when meat is cooked to medium. Remove from oven and let rest 15 mins.
    Meanwhile, for the gravy, heat the stock and tamarind glaze in a saucepan over medium heat until bubbling. Season with a pinch of salt and 2-3 tsp sugar, to taste. Mix the cornstarch with 1 tbsp cold water and stir into the hot gravy. Heat, stirring, until thickened. Slice the pork and serve with the gravy.
