Peach Granita - cooking recipe

Ingredients
    3 cups water
    1 cup, plus 2 1/2 tbsp granulated sugar
    4 None peaches, peeled, pitted, chopped
    None None Peach slices, to serve
    None None Mint leaves, to serve
Preparation
    Combine the water and sugar in medium saucepan. Stir over low heat until the sugar dissolves then bring to a boil. Reduce the heat and simmer, without stirring, for 10 mins. Set aside and cool to room temperature.
    Place chopped peaches and sugar syrup in a food processor or blender. Process until smooth. Strain mixture into a bowl. Cover and freeze for 3 hours, or until the mixture is just set.
    Using a fork, break up the ice crystals. Freeze for a further 30 mins, until firm. Spoon mixture into serving bowls. Top with peach slices and mint leaves.
