Hungarian Sauerkraut Casserole - cooking recipe
Ingredients

600 g potatoes, peeled and chopped
2-3 tbsp oil
150 g salami, skin removed and cubed
1 bunch spring onions, sliced
1 None red pepper, diced
2 jars sauerkraut, each about 425ml
200 g sour cream
4 medium eggs
150 g feta cheese, crumbled
Preparation

Preheat oven to 325\u00b0F. Cook potatoes in boiling salted water for 5-10 mins then drain and set aside.
Heat oil in a large saucepan and saute salami. Add onions and peppers, briefly cook then add sauerkraut and cook for about 10 mins. Add potatoes then transfer 1/2 mixture to a greased baking dish. Mix sour cream and eggs, season then pour 1/2 mixture over sauerkraut. Top with another layer of sauerkraut and cream then top with feta and bake for 40-45 mins.
