Rack Of Lamb With Garlic, Sage And Red Onion - cooking recipe

Ingredients
    3 None large red onions, cut into thin wedges
    1/3 cup extra-virgin olive oil
    2 tbsp chopped fresh sage leaves
    4 cloves garlic, roughly chopped
    4 None racks of lamb (4 cutlets in each), fat trimmed
Preparation
    Preheat oven to 425\u00b0F. Toss onions with 1/2 the oil and place in a roasting pan.
    Combine sage, garlic and remaining oil in a small bowl. Season. Cut small holes in the lamb and stuff with herb mixture. Brush remaining herb mixture over lamb. Place lamb over onions and roast for 20 mins, or until lamb is cooked to your liking. Remove from oven and let rest, covered, for 10 mins before serving.
