Chicken Mole - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None onion, peeled and finely chopped
    2 None garlic cloves, finely chopped
    1 small banana, peeled and finely chopped
    3/4 cup chopped tomatoes
    1 tbsp tomato paste
    1 None vegetable bullion cube, crumbled
    1/4 tsp black pepper
    1/4 tsp cayenne pepper
    1 tsp ground cinnamon
    1 tsp ground cumin
    1 tsp chlli powder
    1 tsp cocoa powder
    1 1/4 lb chicken breasts
    2 tbsp raisins
    2 tbsp toasted sliced almonds
    1 None red chili, sliced
    None None steamed rice, to serve
    None None parsley, to garnish
Preparation
    Heat 1 tbsp of the oil in a saucepan, add the onion and garlic and stir-fry for 3-5 mins until starting to brown.
    Add the banana, chopped tomatoes, tomato paste and the bullion cube to the pan. Mix well. Add the spices and cocoa powder and cook, stirring, for 10 mins (add a little water if necessary).
    Meanwhile, heat the remaining oil in a skillet, season the chicken breasts and add to the pan and cook for 7-8 mins each side, until cooked through. Serve in slices with the sauce. Scatter over the raisins, sliced almonds and chiil slices. Serve with rice. Garnish with parsley.
