Velvet Pea Soup - cooking recipe

Ingredients
    1 tbsp butter
    3 None green onions, chopped
    1 medium onion, finely chopped
    5 cups chicken or vegetable stock
    3 cups frozen peas
    2 large potatoes, peeled and diced
    None None Crusty bread, to serve
Preparation
    Melt butter in a large saucepan on medium heat. Cook green onions and onion for 5 mins, until soft but not browned. Add stock, peas and potato. Season to taste. Cook for 15 mins, until tender.
    Cool for 5 mins. Transfer mixture to a blender or food processor. Puree until smooth. Return to pan and reheat gently. Check seasoning. Serve with crusty bread.
