Lentil, Bulgur And Spinach Soup - cooking recipe

Ingredients
    1 cup brown lentils
    1 cup bulgur wheat
    1/4 cup olive oil
    1 medium onion, finely chopped
    2 cloves garlic, crushed
    12 oz spinach, finely shredded
    2 tbsp coarsely chopped fresh flat-leaf parsley
Preparation
    Bring 2 quarts water to a boil in large saucepan. Cook lentils, uncovered, until just tender. Add bulgur; reduce heat to low. Cover and simmer 1 hour, stirring occasionally.
    Heat oil in medium skillet on medium heat. Cook onion and garlic, stirring, until lightly browned. Add spinach; cover and remove from heat.
    Just before serving, add spinach and onion mixture to lentils; cook on low heat until heated through. Serve sprinkled with parsley. Top with yogurt, if desired.
