Salmon Fillets With Wasabi And Cilantro Butter - cooking recipe

Ingredients
    1 lb potatoes, halved
    1/2 cup butter, softened, plus 2 1/2 tbsp
    1/4 cup olive oil
    4 (7 oz) salmon fillets
    2 tsp coriander seeds, crushed
    1 tbsp wasabi paste
    1 clove garlic, minced
    1/2 cup fresh cilantro leaves
    None None lime wedges, for serving
Preparation
    Boil, steam or microwave potatoes until tender. Drain.
    Meanwhile, heat 2 1/2 tbsp butter and 1 tbsp oil in a large frying pan over high heat until butter begins to foam. Cook salmon, skin-side down, uncovered, for about 3 mins, or until skin is crisp. Reduce heat, cover and cook for 2-3 mins, or until salmon is cooked to your liking. Remove from pan and cover to keep warm.
    Heat remaining oil in a medium frying pan. Cook potatoes, shaking the pan occasionally, for about 5 mins, or until browned all over. Add coriander seeds and cook until fragrant.
    For the wasabi and cilantro butter, beat remaining butter, wasabi paste and garlic in a small bowl until combined. Stir in cilantro. Set aside.
    Serve salmon on potatoes with wasabi and cilantro butter and lime wedges.
