Asian Beef And Rice Noodle Soup - cooking recipe

Ingredients
    2 cups beef stock
    2 inches fresh ginger, grated
    2 cloves garlic, thinly sliced
    1 tbsp sambal oelek
    2 tbsp fish sauce
    1 tbsp brown sugar
    16 oz fresh rice noodles
    1 lb sirloin steak, thinly sliced
    6 None spring onions, thinly sliced
    3 oz bean sprouts, to serve
    3 tbsp fresh mint leaves, to serve
    None None lemon wedges, to serve
Preparation
    Bring 6 cups water, stock, ginger and garlic to a boil. Add sambal oelek, fish sauce and sugar. Simmer, uncovered, for 1 min.
    Meanwhile, prepare noodles according to package instructions. Divide between 4 large serving bowls.
    Add steak to simmering broth and return to a boil. Pour broth and steak over noodles. Top with spring onions. Serve with bean sprouts, mint and lemon wedges on the side.
