Duck Legs With Cider And Peas - cooking recipe

4 (8oz) duck legs, skin scored
5.25 oz baby onions, peeled, halved
2.5 oz smoked bacon, chopped
2/3 cup dry cider
8 oz fresh peas
2 tbsp fresh mint leaves, roughly chopped
None None new potatoes, to serve
Preparation

Heat a frying pan over high heat. Sear duck in the dry pan, skin-side down, for 5 mins, until skin is crispy and golden. Drain off excess fat.
Turn duck over and sprinkle with onions and bacon. Cook for 5 mins. Deglaze pan with cider, scraping up browned bits. Cover and simmer for 10-15 mins, until duck is cooked through.
Add peas and mint to pan. Simmer, uncovered, for 3-4 mins until peas are tender and pan juices have thickened slightly. Serve with new potatoes.
