Blueberry Upside-Down Cake - cooking recipe

Ingredients
    1/4 cup lightly packed brown sugar
    2 cups blueberries, plus additional, to serve
    2 cups flour
    1 cup granulated sugar
    2 1/2 tsp baking powder
    1/2 tsp ground cinnamon
    1 None egg
    3/4 cup milk
    1/3 cup vegetable oil
    1 None lemon, peel finely grated
    None None Powdered sugar, to dust
    None None Whipped cream, to serve
Preparation
    Preheat the oven to 350\u00b0F. Grease and line an 8-inch round cake pan with parchment paper. Sprinkle bottom of pan with brown sugar and top with half of blueberries.
    Sift dry ingredients into a large bowl. Add remaining blueberries and toss to coat. Whisk egg, milk, oil and lemon peel. Add to dry ingredients and stir to combine. Pour into prepared pan.
    Bake 50-55 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Invert onto a plate. Dust with powdered sugar. Serve warm or at room temperature with additional blueberries and a dollop of whipped cream.
