Toasted Homemade Crumpets - cooking recipe

Ingredients
    3 cups flour
    1 pkg (1/4 oz) active dry yeast
    1 cup hot milk
    None None Butter and jam, to serve
Preparation
    Combine flour, yeast and 1 tsp salt in a large bowl. Add 1 1/4 cups hot water and milk and whisk until smooth. Cover with plastic wrap and a tea towel. Set aside in a warm place for 1 hour, until doubled in size.
    Lightly grease 6 egg rings. Grease a large nonstick skillet and heat on medium heat. Place egg rings in pan and pour in dough until rings are three-quarters full. Cook for 6 mins, until surface is covered with holes. Remove egg ring and turn crumpet to brown other side. Cool on a wire rack. Repeat with remaining dough.
    Toast crumpets and serve with butter and jam.
