Peking Duck Rolls - cooking recipe

Ingredients
    2 None duck breasts (about 10.5 oz each), skin scored
    2 bunches spring onions, sliced
    4 None tortilla wraps
    4 tsp hoisin sauce
    2 tsp oil
Preparation
    Preheat the oven to 325\u00b0F. Put the duck breasts skin-side down in a cold non-stick pan and cook them over medium heat for about 5 mins. Transfer to a roasting pan and roast in the oven for about 10 mins. Set aside to cool for about 30 mins then cut in 1/2 horizontally then into long strips.
    Spread the wraps thinly with hoisin sauce. Place 1/4 of the duck and 1/4 of the spring onions on each wrap, roll them up and press them down firmly. Heat 1 tsp oil in a pan and sear the wraps, 2 at a time for about 1 min until golden brown. Cut each wrap into about 6 rolls and serve them on a plate with extra hoisin sauce on the side.
