Cajun Chicken With Chunky Salsa - cooking recipe

Ingredients
    2 tbsp chopped oregano
    2 cloves garlic, crushed
    2 tsp paprika
    2 tsp olive oil
    1 tsp cracked black pepper
    1 tsp red pepper flakes
    4 None boneless skinless chicken breasts, trimmed
    None None Lime wedges, to serve
    None None FOR THE CHUNKY SALSA
    2 large tomatoes, chopped
    1 medium green pepper, seeded and chopped
    1 small red onion, finely chopped
    1/4 cup chopped cilantro
    2 tbsp lime juice
    2 tsp extra virgin olive oil
    None None Few drops Tabasco sauce
Preparation
    Combine oregano, garlic, paprika, olive oil, black pepper and red pepper flakes in a large bowl. Add chicken; turn to coat. Set aside to marinate 15 mins.
    For the salsa, combine all ingredients in a large bowl. Set aside.
    Heat an oiled grill pan on high heat or preheat the grill to medium-high. Grill chicken 3-4 mins each side, or until cooked through. Let stand for 5 mins then thinly slice.
    Serve chicken with salsa, lime wedges and toasted flour tortillas, if desired.
