Baked Fish With Crunchy Nut Crust - cooking recipe

Ingredients
    2 lb white fish fillets
    3/4 cup fresh breadcrumbs
    1/2 cup fresh parsley, chopped
    1/4 cup macadamia nuts, chopped
    1 None lemon, zested and juiced
    2 tbsp olive oil
    2 None avocados, sliced
    3.5 oz bean sprouts, trimmed
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper.
    Place fish on prepared tray. Combine breadcrumbs, parsley, macadamia nuts and lemon zest. Season. Sprinkle over each piece of fish then drizzle with a little oil. Bake for 15 mins, or until fish flakes easily with a fork and is no longer transparent.
    Meanwhile, toss together avocados and bean sprouts. Drizzle with remaining oil and lemon juice. Season. Serve with fish.
