Chorizo And Potato Fritters - cooking recipe
Ingredients

2 tsp vegetable oil
7 oz chorizo, chopped finely
1 None small yellow onion, chopped finely
2 None small red chillies, deseeded, chopped finely
2 None zucchini, coarsely grated
1 lb potatoes, peeled, coarsely grated
1 None small sweet potato, peeled, coarsely grated
3 None large eggs, lightly beaten
1 cup all-purpose flour
1 tsp sweet paprika
None None Vegetable oil, for deep frying
None None Dipping Sauce
1/2 cup sour cream
2 tbsp sweet chili sauce
Preparation

Heat oil in medium frying pan and cook chorizo, onion and chili, stirring, until onion softens. Add zucchini. Cook, stirring, for 1 min. Cool for 10 mins.
Combine chorizo mixture in large bowl with potato, sweet potato, eggs, flour and paprika.
Heat oil in wok or large saucepan. Deep fry level tablespoons of potato mixture until fritters are browned lightly. Drain on paper towels.
Make dipping sauce by combining sour cream and sweet chili sauce in a small bowl. Serve fritters with dipping sauce on the side.
