Chicken And Sweet Potato Lasagna - cooking recipe

Ingredients
    1 lb sweet potato, peeled, thinly sliced
    1 tbsp olive oil
    1 None onion, finely chopped
    2 cloves garlic, minced
    1 lb ground chicken
    1/2 cup tomato sauce
    1/2 cup chicken stock
    4 sheets fresh lasagna
    8 None chard leaves, stems removed, leaves blanched, drained
    3 tbsp mozzarella cheese, grated
    None None salad, to serve
Preparation
    Preheat oven to 400\u00b0F. Lightly grease a baking dish and 2 baking trays.
    Arrange sweet potato slices on trays. Season. Bake for 5-10 mins, or until tender.
    Meanwhile, heat oil in a large frying pan over high heat. Saute onion and garlic for 2-3 mins, or until tender. Add ground chicken and cook for 5 mins, or until browned, breaking up lumps with a spoon. Add tomato sauce and stock. Reduce heat and simmer for 3-5 mins.
    Line prepared dish with 1 lasagna sheet. Spread 1/3 of the chicken mixture over top. Add another sheet of lasagna, 1/2 of the chard, 1/2 of the cheese and 1/2 of the remaining chicken mixture. Top with another sheet of lasagna, sweet potatoes and remaining chicken mixture. Add the last sheet of lasagna, remaining chard and cheese. Bake for 25-30 mins, or until tender and golden.
    Serve with salad.
