Barbecued Chicken - cooking recipe

1 cup sparkling apple juice
1/2 cup barbecue sauce
2 tbsp brown sugar
8 None skinless chicken thigh fillets
1 lb new baby potatoes, halved
1 tbsp vegetable or olive oil
10.5 oz green beans, trimmed
4 None small frozen corn cobs
Preparation

Preheat oven to 400\u00b0F. Pour 1/4 cup water into a roasting pan. Spray a wire rack with oil then place in prepared pan.
Combine apple juice, barbecue sauce and sugar. Place chicken in a large bowl and coat with 1/2 the sauce. Reserve remaining sauce. Cover and chill for 10 mins to marinate. Remove chicken from marinade and place on prepared rack.
Combine potatoes and oil. Season then place on a baking tray lined with parchment paper. Bake chicken and potatoes for 20 mins, brushing chicken with reserved sauce. Transfer chicken from rack to roasting pan. Whisk 1/4 cup water into reserved sauce. Pour over chicken and return to oven. Cook chicken and potatoes for another 10 mins, or until browned and cooked through.
Meanwhile, place green beans, corn and 2 tbsp water in a large microwave-safe bowl. Cover with plastic wrap and microwave on HIGH (100%) for 3 mins, or until just soft. Drain. Serve chicken with pan juices, potatoes and steamed vegetables.
