Chorizo, Sweet Potato And Pea Frittata - cooking recipe

Ingredients
    1 lb sweet potatoes, peeled, thinly sliced
    2 links chorizo, thinly sliced
    2 oz frozen peas
    3 oz grated mozzarella cheese
    8 None large eggs, at room temperature
    2/3 cup heavy cream
Preparation
    Preheat oven to 350\u00b0F. Grease and line an 8 inch round cake pan with parchment paper. Place on a baking tray.
    Place sweet potatoes in a large, microwave-safe bowl. Cover with plastic wrap and microwave on HIGH (100%) for 3 mins, or until just tender. Let stand for 5 mins then drain.
    Meanwhile, place a large nonstick frying pan over medium-high heat. Cook chorizo for 2-3 mins, or until crisp. Drain on paper towels.
    Arrange sweet potatoes over base of prepared pan. Top with a layer of chorizo, peas and 3/4 of the mozzarella. Whisk eggs and cream together. Season. Pour into pan and let stand for 5 mins. Top with remaining mozzarella and bake for 40-45 mins, or until golden brown and set. Let stand in pan for 15 mins then remove from pan and cut into wedges to serve.
