All-Day Breakfast - cooking recipe

Ingredients
    8 None eggs
    1/3 cup heavy cream
    1/2 cup Parmesan, shaved
    8 slices pancetta, chopped
    3 1/2 oz button mushrooms, roasted
    3 1/2 oz cherry tomatoes, roasted
    8 slices thick bread, toasted
Preparation
    In a large bowl, whisk together eggs, cream and Parmesan. Season to taste.
    Heat a large, lightly greased non-stick skillet over high heat. Cook pancetta for 2-3 mins until crisp.
    Reduce heat and add egg mixture to pan; stir over low heat for 2-3 mins until almost set. Remove from heat.
    Serve with toast, tomatoes and mushrooms.
