Lemon Mint Couscous - cooking recipe
Ingredients

12 oz pearl couscous
2 cups chicken broth
1 None orange, zested and juiced
1 None lemon, zested and juiced
2 tbsp olive oil
2 tbsp Parmesan cheese
2 tbsp fresh parsley leaves, chopped
1 tbsp fresh basil leaves, chopped
1 tbsp fresh mint leaves, chopped
1 1/2 cups cherry tomatoes, halved
1 cup chopped seedless cucumber
1/4 cup chopped scallion
1/4 cup toasted almonds
Preparation

Cook couscous according to package directions, substituting chicken broth for water. Let cool.
Meanwhile, whisk together 1/4 cup orange juice, 1 tsp orange zest, 2 tbsp lemon juice, 1 tsp lemon zest, olive oil, Parmesan cheese and herbs. Add tomatoes, cucumber, scallions and cooled couscous. Toss gently to coat. Season. Stir in almonds.
