Rocky Road Brownies - cooking recipe
Ingredients

2/3 cup butter, chopped
14 oz dark chocolate, roughly chopped
2 None large eggs, lightly beaten
2/3 cup brown sugar
3/4 cup all-purpose flour, sifted
3.5 oz red glace cherries, halved
3/4 cup mini marshmallows
1/3 cup unsalted peanuts
1/2 cup dried shredded coconut

Preheat oven to 325\u00b0F. Grease and line an 8x12 cake pan with baking paper, extending paper on long sides for handles.
Combine butter and 5 oz chocolate in a medium heatproof bowl over a saucepan of simmering water (don't let bowl touch water). Cook and stir for 3-4 mins or until melted and smooth. Cool slightly.
Add eggs and sugar to chocolate mixture; stir until smooth. Fold in flour until combined. Pour into prepared pan and smooth surface.
Bake for 25 mins or until just firm at center. Cool completely in pan. Transfer to a cutting board.
Melt the remaining chocolate and spread one-third over top of brownie. Spread cherries, marshmallows, nuts and coconut over chocolate. Drizzle with remaining melted chocolate. Set aside for 30 mins to set. Cut into pieces. Serve.
