Honey And Ginger Chicken - cooking recipe

Ingredients
    1/4 cup brown sugar
    1/2 cup honey
    4 inches fresh ginger, thinly sliced, cut into thin strips
    1 None lemon, rind peeled into thin strips with a zester
    2 cloves garlic, minced
    1 None fresh large green chili, chopped (optional)
    4 None chicken thighs, deep slashes cut through thickest part of flesh at 3/4 inch intervals
    4 None chicken drumsticks, deep slashes cut through thickest part of flesh at 3/4 inch intervals
    3 None spring onions, thinly sliced
    None None steamed rice, to serve
Preparation
    Bring sugar, honey and 1/4 cup water to a boil. Add ginger. Simmer, stirring, for 5 mins, or until ginger is tender. Transfer to a large, heatproof bowl. Stir in lemon rind, garlic and chili (if using). Add chicken. Remove from heat, cover and let cool. Chill for 3 hours or overnight, turning occasionally.
    Preheat oven to 350\u00b0F. Place chicken mixture in a roasting pan. Roast for 40 mins, or until chicken is browned and cooked through.
    Sprinkle with spring onions and serve with steamed rice.
