Marinated Deep Fried Snapper - cooking recipe

Ingredients
    2 None snapper fillets, deboned, cut into 1 1/4 inch cubes
    2 tbsp sake
    2 tbsp Japanese soy sauce
    1 tbsp mirin
    3/4 inch fresh ginger, grated
    1/2 cup potato starch
    None None vegetable oil, for deep-frying
    1 None spring onion, thinly sliced
    2 None lemons, cut into wedges
Preparation
    Combine fish, sake, soy sauce, mirin and ginger in a medium bowl. Marinate for 20 mins.
    Drain fish and discard marinade. Toss fish in potato starch, shaking off excess.
    Meanwhile, heat oil in saucepan. Deep-fry fish until crisp and golden. Sprinkle with onion and serve with lemon wedges.
