Hearty Beef And Tomato Casserole - cooking recipe

Ingredients
    1 tbsp olive oil
    2 None onions, chopped
    1 clove garlic, minced
    1 1/2 lb diced beef
    4.5 oz mushrooms, sliced
    2 tbsp powdered gravy mix
    1 (13.5 oz) can crushed tomatoes
    1/2 cup red wine
    1 tsp mixed herbs
    3 tbsp fresh parsley leaves, chopped
Preparation
    Heat olive oil in a large frying pan. Saute onions and garlic for 2 mins, until tender. Add beef. Cook for 3-4 mins, until browned. Add mushrooms and cook, stirring, for 1 min. Add gravy mix, tomatoes, red wine, 1/2 cup water and mixed herbs. Season. Bring to a boil then reduce heat and simmer gently, stirring occasionally, for 15-20 mins.
    Just before serving, mix in parsley.
