Potato And Spinach Filo Pie - cooking recipe

Ingredients
    6 oz potatoes, peeled and sliced
    1 1/3 lbs sweet potato, peeled and sliced
    1 None onion, finely chopped
    2 cloves garlic, crushed
    1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
    1 None lemon, peel grated
    6 sheets phyllo dough
    1 cup crumbled low fat feta cheese
    1/2 cup grated Parmesan cheese
    1/2 cup chopped parsley
    1/4 cup fat free milk
    2 None eggs
    None None Salad and tomatoes, to serve
Preparation
    Microwave the potatoes and sweet potatoes in large microwavable bowl on high for 6 mins, until just tender, tossing slices once or twice during cooking.
    Spray a large skillet with no stick cooking spray and heat on medium. Cook onion and garlic for 5 mins, until soft. Add spinach and lemon peel and cook for 2 mins, until dry.
    Preheat the oven to 400\u00b0F. Spray a 9-inch springform pan with cooking spray. Spray each sheet of phyllo with cooking spray. Line bottom and sides of pan with phyllo and trim edges.
    Spread 1/2 of potato slices on bottom. Top with 1/2 each of sweet potato slices, feta, Parmesan, spinach mixture and parsley. Repeat layers. Beat milk and eggs in a medium bowl. Pour over the top.
    Bake for 45 mins, until set and lightly browned. Let stand in pan for 10 mins to cool slightly. Cut into wedges and serve with salad and tomatoes.
