Beef Quesadillas - cooking recipe

Ingredients
    1 medium avocado, peeled, pitted and chopped coarsely
    1 tbsp lemon juice
    1 tbsp vegetable oil
    1 lb ground beef
    2 tsp ground cumin
    1 can (15 oz) kidney beans, drained and rinsed
    3 medium plum tomatoes, finely chopped
    3 None green onions, thinly sliced
    8 None flour tortillas
    1 cup grated Cheddar cheese
    1/4 cup sour cream
    1 medium lemon, cut into wedges
Preparation
    Using a fork, mash the avocado and lemon juice together in a small bowl. Season to taste.
    Heat oil in a large skillet on high heat. Cook the beef, stirring, until browned. Add cumin; cook, stirring, 1 min or until fragrant. Stir in the beans, tomato and onion. Remove from heat.
    Divide beef mixture among four tortillas; sprinkle with cheese. Top with remaining tortillas. Cook one at a time in a preheated sandwich press, for about 2 mins or until cheese is melted and tortillas are browned lightly. (Or cook in oiled skillet on medium-low heat about 2 mins each side.)
    Cut quesadillas into quarters. Serve with avocado mixture, sour cream and lemon wedges.
