Winter Salad - cooking recipe

Ingredients
    1/2 cup extra virgin olive oil
    1/3 cup red wine vinegar
    1 clove garlic, crushed
    1/2 tsp sugar
    6 oz baby arugula leaves
    6 oz baby spinach leaves
    2 cups loosely packed flat-leaf parsley leaves
    1/4 medium red cabbage, finely shredded
    1/2 medium red onion, thinly sliced
Preparation
    For the dressing, combine oil, vinegar, garlic and sugar in a small bowl. Season to taste with salt and pepper.
    Combine remaining ingredients in a large bowl. Just before serving, add dressing and toss well.
