Chocolate Mousse Cake - cooking recipe

Ingredients
    7 oz dark chocolate, 6 oz broken into pieces, 1 oz shaved
    6 None eggs, separated
    3/4 cup sugar
    35 None Ladyfinger cookies
    1/2 cup heavy cream, whipped
Preparation
    Melt the broken chocolate in a heatproof bowl set over a pan of simmering water. Beat the egg yolks and half the sugar in a heatproof bowl set over a pan of barely simmering water until bright yellow and creamy. Remove from the heat and gradually stir in the melted chocolate.
    Beat the egg whites until they from stiff peaks, gradually add the remaining sugar and a pinch of salt. Gently fold into the chocolate mixture and chill for 1 hour.
    Line an 8 inch diameter cake pan with aluminum foil. Line the bottom and sides with the ladyfingers. Spoon in the chocolate mousse and smooth out. Chill for at least 3 hours.
    Turn out on to a plate and remove the foil. Spread the whipped cream over the top and top with the chocolate shavings.
