Snowball Skewers - cooking recipe

Ingredients
    1 cup medium-grain white rice
    9 oz ground pork or chicken
    1 None green onion, finely chopped
    2 tsp grated fresh ginger
    1 clove garlic, crushed
    2 tbsp soy sauce
    1 tbsp sesame oil
    12 small mint leaves
    6 None cherry tomatoes, cut in half
Preparation
    Soak rice in cold water for 30 mins. Line a baking pan with paper towels. Drain rice and spread on prepared pan.
    Place ground pork, onion, ginger, garlic, soy sauce and sesame oil in a large bowl. Using damp hands, mix until well combined. Roll mixture into 12 balls. Roll each ball in rice to coat.
    Place balls, in single layer, in a bamboo steamer basket. Cover with a tight-fitting lid. Place over a pan of simmering water. Steam for 10-12 mins, until rice is tender and pork cooked through. Cool slightly.
    Thread one ball, mint leaf and a tomato half onto a skewer. Repeat to make 12 skewers in total.
