Baked Potatoes With Mediterranean Vegetables - cooking recipe

Ingredients
    6 None baking potatoes, scrubbed
    9 oz cherry tomatoes, halved
    1 bunch scallions, sliced
    2 oz pitted black olives
    15 oz jar artichoke hearts in oil, drained and halved
    3 tbsp olive oil
    6 tbsp sour cream
Preparation
    Preheat the oven to 400\u00b0F. Put the potatoes in a roasting pan and bake for about 1 hour or until tender.
    Mix together the tomatoes, scallions, olives and artichokes in a bowl. Add the olive oil and season with salt and pepper.
    Remove the potatoes from the oven and cut each almost in half. Place a spoonful of the sour cream in each and pile the vegetables on top. Cover with foil and return to the oven for another 20 minutes until the vegetables are heated through.
