Burger On Whole Wheat Bread With Curried Apple Mayo - cooking recipe

Ingredients
    1 small red apple, peeled, cored and grated
    4 tbsp reduced fat mayonnaise
    1 tsp curry powder
    1 lb lean ground beef
    1-2 tsp whole grain mustard
    1 tbsp olive oil
    8 slices thin whole wheat bread
    4 leaves radicchio lettuce, torn
    1 small green pepper, seeded and sliced into rings
    2 None onions, sliced into rings
Preparation
    For the curried apple mayo, mix the apple, mayonnaise and curry powder. Season with salt and pepper.
    Place the ground beef and mustard in a large bowl. Mix until well blended. Shape into 4 slightly square patties to fit the shape of the bread.
    Heat the oil in a large skillet on medium heat. Cook the burgers 3-4 mins on each side until cooked through. (You may need to do this in batches).
    Fill the bread slices with the lettuce, burgers, peppers and onions. Cut diagonally and secure each half with a cocktail pick, if desired. Serve with the curried apple mayo.
