Chicken And Roasted Butternut Squash Pizzas - cooking recipe

1/2 None butternut squash, peeled, seeded and coarsely chopped
1 tbsp olive oil
2 cups shredded cooked chicken
1/2 tsp Cajun seasoning
2 None (12-inch) prepared pizza crusts
1 cup tomato puree
1 1/2 cups coarsely grated mozzarella cheese
1/4 cup coarsely chopped fresh flat-leaf parsley
Preparation

Preheat the oven to 400\u00b0F.
Toss the squash and oil on a small baking dish and season. Roast, uncovered, for about 15 mins or until the squash is tender. Cool.
Increase the oven temperature to 425\u00b0F. Oil 2 baking or pizza pans and place in the heated oven.
Combine the chicken and seasoning in a medium bowl.
Place pizza crusts on preheated pans. Spread with tomato puree. Top with cheese, squash and chicken.
Bake for about 15 mins or until the crusts are browned and crisp and the chicken is heated through. Serve sprinkled with parsley.
