Chicken Fajitas With Fresh Tomato Salsa - cooking recipe

Ingredients
    1 1/2 lbs chicken tenders
    1 tbsp lemon juice
    2 tbsp vegetable or olive oil
    1 pkg (1 oz) fajita seasoning mix
    1 medium yellow pepper, seeded and cut into wide strips
    1 medium green pepper, seeded and cut into wide strips
    1 large red onion, cut into thin wedges
    12 None flour tortillas, warmed
    None None FOR THE TOMATO SALSA
    3 medium ripe tomatoes, chopped
    1/2 small red onion, finely chopped
    1 None red chili pepper, finely chopped
    2 tbsp finely chopped fresh cilantro
Preparation
    Place chicken in a large glass bowl. Add lemon juice and 1 tbsp of the oil; toss to combine. Add seasoning mix; toss to coat chicken. Cover with plastic wrap. Refrigerate for 1 hour to marinate. For the tomato salsa, combine all ingredients in a medium bowl. Set aside.
    Toss peppers, onion and remaining 1 tbsp oil in a medium bowl. Preheat a grill pan to medium-high or preheat the grill on medium. Grill vegetables, in batches, for 3-5 mins or until tender. Transfer to a bowl; cover with foil to keep warm.
    Grill chicken for 3-4 mins each side or until cooked through. Transfer to a plate. Cover with foil; let stand for 5 mins.
    Arrange chicken and vegetables on a platter. Serve with warm tortillas and salsa.
