Caramelized Leek And Brie Tartlets - cooking recipe

Ingredients
    1 tbsp olive oil
    2 tbsp butter
    2 None leeks, thinly sliced
    1 clove garlic, crushed
    1 tbsp light brown sugar
    1 tbsp white wine vinegar
    3 sheets frozen puff pastry, thawed
    8 oz brie cheese
    24 sprigs sprigs lemon thyme
Preparation
    Preheat the oven to 200\u00b0F. Grease two 12-cup mini muffin pans.
    Heat oil and butter in a large skillet on medium heat. Cook leek, stirring, about 5 mins or until leek softens. Add garlic, sugar and vinegar; cook, stirring, about 8 mins or until leek caramelizes.
    Cut eight squares from each pastry sheet. Press one pastry square into each muffin cup. Spoon leek mixture into crusts.
    Cut cheese into 24 pieces. Place a piece of cheese in each tartlet.
    Bake about 20 mins. Serve tartlets topped with thyme.
