Leek And Carrot Pizza - cooking recipe

Ingredients
    200 ml semi-skimmed milk
    250 g plain flour, plus extra for dusting
    1/2 tsp salt
    1 tsp sugar
    1/2 x 7 g sachet dried yeast
    500 g carrots, peeled and sliced on the diagonal
    350 g leeks, sliced on the diagonal
    2 medium eggs
    30 g parsley, chopped, reserving a few leaves to garnish
    Pinch None ground nutmeg
    1 tbsp breadcrumbs
    3 tbsp olive oil
Preparation
    Heat 1/2 cup milk until lukewarm. Place the flour in a mixing bowl with the salt, sugar and yeast. Add the lukewarm milk and the oil. Place in a mixer with a dough hook attachment and mix until smooth. Knead briefly on a lightly floured surface if necessary. Cover and set aside for 30 mins.
    Meanwhile, cook the carrots and leeks in salted boiling water for 10 mins. Drain. Set aside.
    Preheat the oven to 400\u00b0F. On a lightly floured surface, roll out the dough to an 11 inch circle. Line an 11 inch pizza pan with parchment parchment. Transfer the dough to the pizza pan, push the edges up slightly and dust with flour. Sprinkle with the breadcrumbs and place the vegetables on top. Combine the eggs, chopped parsley, nutmeg and remaining milk and mix well. Season then pour over the vegetables. Bake for 20-25 mins. Garnish with the reserved parsley.
