Egg And Bacon Tarts - cooking recipe
Ingredients

2 sheets frozen pie dough, thawed
2 tsp olive oil
3 slices bacon, halved
1 None red onion, thinly sliced
3 None cherry tomatoes, halved
1 tbsp fresh flat-leaf parsley leaves
6 None large eggs

Preheat oven to 400\u00b0F. Lay tart dough out on a flat work surface. Cut 3 (5 inch) rounds from each sheet then use to line 6 small tart pans. Cover with parchment paper, fill with baking beans and blind bake for 10 mins. Remove paper and beans and bake for 5 mins. Reduce oven to 350\u00b0F.
Meanwhile, heat oil in a nonstick frying pan over high heat. Cook bacon for 2-3 mins, until lightly browned. Remove from pan and let cool. Reduce heat to medium and saute onion for 5-10 mins, until caramelized. Season to taste.
Divide caramelized onions between tart shells and top with bacon, tomatoes and parsley. Carefully crack an egg into each shell then bake for 15-20 mins, until egg sets. Remove tarts from pans. Serve hot.
