Pork Sausages With Zucchini Fritters - cooking recipe

Ingredients
    1 1/2 lbs ground pork
    1 None small green apple, peeled, cored, grated
    1 None small onion, grated
    1 tsp lemon pepper
    1/2 cup breadcrumbs
    1/4 cup olive oil
    3 None zucchini, grated
    1/4 cup all-purpose flour
    2 tbsp mozzarella, grated
Preparation
    Preheat oven to 350\u00b0F. In a bowl, combine pork, apple, onion, and lemon pepper and season to taste. Divide mixture into 8 portions. Roll portions into 4 inch-long sausages. Coat in breadcrumbs.
    Heat 2 tsp oil in a non-stick frying pan on medium. Add 4 sausages and cook for 4-5 mins, turning, until browned on all sides. Transfer to a baking sheet. Cook remaining sausages in frying pan, adding oil as required. Transfer to baking sheet. Bake for 8-10 mins or until cooked through.
    Meanwhile, combine zucchini, flour and cheese in a bowl and season to taste. Heat 2 tbsp oil in same pan. Spoon 2 tbsp zucchini mixture into pan, flattening with a spatula. Cook for 2-3 mins, or until golden. Turn and cook another 1-2 mins or until cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining mixture.
    Serve sausages with zucchini fritters.
