Minty Tabbouleh Salad - cooking recipe

Ingredients
    2 oz bulgur wheat
    1/2 None cucumber, deseeded, finely diced
    2 None shallots, sliced
    1/3 cup fresh flat-leaf parsley leaves, chopped
    2 tbsp fresh mint leaves, chopped
    2 tbsp lemon juice
    1 tbsp extra virgin olive oil
Preparation
    Combine bulgur wheat with 1/2 cup boiling water. Set aside for 15 mins. Drain excess water then squeeze out any remaining water.
    Mix in cucumber, shallots, parsley and mint. Add lemon juice and olive oil. Season.
