Pork With Arugula Salad - cooking recipe

Ingredients
    4 None pork loins, pounded
    1 oz polenta
    1/4 cup vegetable or olive oil
    2 None red apples, cored, thinly sliced
    1 tbsp red wine vinegar
    4 oz baby arugula
    1/2 None small red onion, thinly sliced
    1 tsp Dijon mustard
    1/2 tsp sugar
    1 oz Parmesan cheese, shaved
    None None lemon wedges, to serve
Preparation
    Coat pork lightly with polenta.
    Heat 2 tbsp oil in a large frying pan over medium-high heat. Cook pork for 2 mins per side, or until cooked to your liking. Drain on paper towels.
    Combine apples, vinegar, arugula and onion in a large serving bowl. Whisk remaining oil, mustard and sugar together then pour over arugula and toss to combine. Sprinkle with Parmesan. Serve pork with salad and lemon wedges.
