Cinnamon Raisin Muffins - cooking recipe

Ingredients
    2 1/2 cups self-raising flour
    1 tsp cinnamon
    1/2 cup firmly packed brown sugar
    1/2 cup raisins
    1 cup milk
    9 tbsp melted butter
    1 None egg, lightly beaten
Preparation
    Preheat oven to 400\u00b0F. Grease three 12-hole mini muffin pans.
    Combine flour, cinnamon, brown sugar and raisins in a large bowl. Stir in milk, melted butter and egg, do not over-mix (the batter should be coarse and slightly lumpy). Divide mixture into muffin pans, bake about 15 mins. Let muffins cool in the pan for 5 mins before turning, top-side up, onto wire racks to cool. Serve warm or cooled.
