Italian Lamb Penne - cooking recipe

Ingredients
    18 oz penne pasta
    2 tbsp vegetable or olive oil
    1 lb lamb and mint sausages
    1 None onion, thickly sliced
    2 cloves garlic, minced
    1 (13.5 oz) can diced tomatoes with oregano and basil
    1/2 cup fresh flat-leaf parsley, chopped
    2 tbsp black olives, pitted and sliced
    None None mixed greens, to serve
Preparation
    Cook pasta in boiling salted water for 10 mins, or until al dente. Drain then return to pot.
    Meanwhile, heat 1 tbsp oil in a frying pan over medium heat, add sausages and cook for 10 mins, or until cooked. Let rest for 5 mins then slice thickly.
    Add remaining oil to pan and saute onion and garlic for 3 mins, or until soft. Add sausage, tomatoes and 1 2/3 cups water. Simmer, stirring occasionally, for 10 mins, or until sauce reduces. Toss with pasta then add parsley and olives. Serve with mixed greens.
